Super-easy oatmeal biscuits with a delightful crunchy texture. A bit like Hobnobs, only better.
4oz brown sugar
4oz unsalted butter
6oz rolled oats
6oz flour
1 tsp bicarbonate of soda
2 tbsp milk
Preheat the oven to 150°C. Grease two baking sheets. Cream the butter and sugar together in a bowl.
Mix in the oats, sift in the flour and bicarb together, and mix thoroughly. Add sufficient milk to form a into a stiffish dough ball, that's very slightly sticky on the surface.
Turn out onto a floured surface, roll out the dough thinly and cut into rounds with a 2 inch cutter.
Put onto the greased baking sheets and bake for 15-20 mins until golden brown. Transfer to a wire rack to cool
