Whitworth’s Dates
4 tbsp clear honey
2oz light brown sugar
7oz tin lychees
7oz tin pineapple cubes (both drained & juice reserved)
2 oranges, zested & sliced
5oz stoned dates
2oz pecan nuts
crème fraîche
Place the honey, sugar, pineapple and lychee juice in a sucepan. Bring to the boil, and simmer until the sugar has dissolved. Leave to cool.
In a deep bowl, combine the lychees, sliced pineapple, sliced orange, dates and pecans.
Pour over the prepared syrup. Cover and chill for 30 mins.
Top with crème fraîche and grated orange zest to garnish.
