600g pork fillets
Mix all marinade ingredients together, and spread over pork. Marinade in large dish in fridge overnight.
Place pork on rack in roasting tin, half-filled with water.
Roast in a preheated oven at 220°C for about 20 mins. Baste with marinade, then lower the heat to 180°C for another 35-40 mins, basting occasionally.
Cut the pork into slices and serve on a bed of shredded Chinese leaves.
