6 oz plain flour
6 oz butter
(at room temp)
3 oz semolina
3 oz caster sugar
Rub butter into flour and semolina until it resembles breadcrumbs.
Add the sugar and knead the mixture until it forms a single lump.
Put into a greased tin, and press down gently.
Prick all over with a fork.
Cook in moderate oven for 15-20 mins
Remove from oven and score into pieces. Sprinkle over with sugar.
