2 tbsp olive oil
2 large onions, sliced lengthways
2 red peppers, diced large
2 garlic cloves, chopped
1 tbsp thyme leaves
200g baby new potatoes (unpeeled and halved)
8-12 sausages
200 ml white wine
salt & black pepper
mustard to serve
Preheat the oven to 200º (180º fan).
Place all ingredients (except the wine) in a roasting tin. Toss in the oil and season with salt and pepper. Keep in one layer, don't cover the sausages.
Roast for 30-35 minutes until golden. Give it a stirm and turn the sausages over. Pour int he wine and return to the oven for a further 15-20 mins.
Serve with a dollop of mustard. (Peas go well too).
