100g crunchy peanut butter
1½ tbsp coconut oil
1 tbsp honey (or maple syrup)
1 tsp vanilla extract
½ tspn ground cinnamon
20g ground flaxseed
10g chia (or sesame) seeds
50g oats
50g almonds, chopped
15g desiccated coconut
25g almonds, chopped
25g dark chocolate
½ tsp coconut oil
Line the base of a loaf tin with greaseproof paper.
Place 25g almonds in a pan over a low heat until lightly toasted. Set aside.
Place the peanut butter, coconut oil, honey, vanilla extract and cinnamon in a saucepan and place over a low heat. Stir until mixture is well combined. Remove from the heat.
Stir in the flaxseed, chia, oats, almonds and coconut and stir until well combined.
Transfer the mixture to the tin, and press to compact the mixture.
Add the toasted almonds and press firmly.
Place the chocolate and coconut oil in a small saucepan, and stir over a low heat until melted. Drizzle over the bars.
Cover and freeze the bars for 20 mins or until firm. Cut into 8-12 pieces.
