1 red onion, chopped
8 oz (250g) chestnut mushrooms, chopped
2 oz (50g) stilton
1pt (560ml) basic white sauce
1oz (25g) mature cheddar cheese
6-8oz (200g) fresh pasta sheets
1oz (25g) fresh grated parmesan

Fry the onions in a little oil until soft. Add the mushrooms and fry until the mixture resembles a brown mush.
Crumble the blue cheese into the mixture and season with salt and pepper to taste.
Make a basic white sauce and add the grated cheddar. Season to taste.
Pour a little of the cheese sauce and a couple of spoonfuls of the mushroom mixture into an lightly greased oblong dish (approx 8" x 10"). Spread out evenly to just cover the bottom of the dish and cover with a single layer of pasta sheets.
Repeat until there are about 4 layers of pasta and all the mushroom mix is used.
Pour the last of the cheese sauce mix over the pasta ensuring it is completely covered. Sprinkle the grated parmesan over the sauce and season with freshly grated black pepper.
Bake for 20-25mins at 200°C (175°C for fan ovens) until the top is a light golden colour.
Serve with a fresh green salad.
