Ready in 10 minutes. To add sauce, warm 4 tbsp readymade chocolate sauce in a bowl, and pour over the pudding.
100g caster sugar
100g softened butter
100g self-raising flour
25g cocoa powder
2 eggs
1 tsp vanilla essence
25g chocolate pieces
crème fraîche or ice cream, to serve
Mix the sugar, butter, flour, cocoa powder, lemon zest, eggs and vanilla together until creamy, then spoon into a medium microwave-proof baking dish.
Microwave on High for 3 mins, until risen and set all the way through. Leave to stand for 1 min.
Serve with a dollop of crème fraîche or scoops of ice cream.
