2 cups plain flour
2 tsp baking powder
½ tsp salt
5 oz (2/3 cup) sugar
1 egg
80ml (1/3 cup) vegetable oil
160ml (2/3 cup) milk
Orange zest
80 ml (1/3/cup) orange juice
2oz dark chocolate, chopped
Sift the flour into a large bowl with the baking powder and salt. Add the sugar and mix together.
Place the oil, milk, egg, orange juice and zest into a separate bowl and beat together until the mixture becomes frothy.
Add the liquid mixture to the flour mixture, and stir to form a batter.
Brush a muffin tin with oil, and divide the mixture to make approx 10 muffins.
Push chocolate pieces into the mixture.
Cook at 200° for 20 mins (or 170° for 15 mins in fan oven).
