2 tblsp olive oil
1 large onion chopped
2 cloves garlic, crushed
ilb minced beef
2 tsp chilli powder
¼ tsp dried oregano
1 tsp salt
4 tblspn beef stock
14 oz can tomatoes
12 oz sweetcorn kernels
14 oz can kidney beans
Place the oil in a dish with the onion and garlic. Cover and cook for 2 minutes.
Add the beef, cover and cook for 10 minutes, stirring half way through the cooking time.
Stir in the chilli powder, oregano, salt, stock, and tomatoes. Cover and cook for 5 minutes.
Add the corn and kidney beans. Stir, cover and cook for 5 minutes. Serve with boiled rice.
