For the Nord Spices, mix ground spices in the following ratios: 1½ cardomon, ¾ cinnamon, ¼ mace, ¼ cloves, ⅛ grains pf paradise.
Combine the dough ingredients in a medium bowl, and rub in the butter until you have fine breadcrumbs.
Gradually stir in enough cold water (1-2 tbsp) until the dough comes together. Form into a disk, wrap, and refrigerate for at least an hour.
Preheat the oven to 160°F, and line the bottom of an 8 inch spring form tin with baking paper. Place into the tin, draping the excess over the sides. Prick the bottom with a fork. Cover and refrigerate while you make the filling.
In a medium bowl, combine the granulated sugar, 2 eggs, Nord Spices, melted butter and almond extract. Whisk in the flour until you have a thick batter.
Pour half the cranberries into the dough case, and our the batter over. Spread the almonds over the batter, and top with the remaining cranberries, pressing them gently into the batter.
Fold the hanging edges of the dough over the filling. Brush with the beaten egg to glaze. Bake for about 40 mins, until a toothpick comes out clean. Allow to cool for 10mins, then dust with icing sugar.
