Wine and thyme in a fruit tart? Genius.
Combine the dough ingredients in a medium bowl, and rub in the butter until you have fine breadcrumbs.
Gradually stir in enough cold water (1-2 tbsp) until the dough comes together. Form into a disk, wrap, and refrigerate for at least an hour.
Line the bottom of with baking paper, and Preheat the oven to 160°F. Roll out the dough to ¼ inch thick, and put into an 8/9 inch spring-form tin. Press into the sides of the tin and trim off any excess. Prick the bottom with a fork, and blind bake for 15 mins or until the crust has started to turn golden. Allow to cool.
Thinly slice the strawberries. Toss in granulated sugar, and let them sit around for 15 mins. Strain the juice into a small saucepan and set the strawberries aside.
Add port and thyme to the strawberry juice, and place over a medium heat until it has reduced by about half to make a port glaze (it will thicken as it cools).
In a medium bowl, combine the marscapone, icing sugar and cream, and beat until combined.
Spread the marscapone mixture across the bottom of the cooled tart shell. Layer the strawberries on top, then drizzzle with the port glaze (thyme sprigs removed).
