You can also use lamb chops about ¼ inch thick. It goes really well with double-baked potatoes and fresh veg.
Combine all the ingredients except for the butter in a glass dish, cover and marinate for at least 2 hours.
Take the lamb from the marinade, strain the liquid into a pan and set aside.
Melt the butter in a skillet, season the lamb, and cook for 5-10 mins, turning occasionally until cooked through. Remove to a plate and keep warm.
Make the sauce by reducing the strained marinade liquid over a medium heat until noticably thickened. Serve the lamb with the sauce over the top.
